As much as I protest the changing of the seasons, this post from Design Sponge reminded me of one of my favorite things about fall (besides my birthday!!)… apples! I eat a plain apple every single morning. Gala, Honeycrisp, Jona Gold – the perfect sweetness, the crispness, it’s like taking a drink of the best water there is. I vastly prefer organic apples – I can’t deal with wax being sprayed on the apple skin that I eat.
Even though on Monday night after two late nights in a row, I swore off canning for the season (8 cups of nectarine cherry jam and 6 pints of southwest salsa), I am now looking up new apple butter recipes. The last time I made it, it just didn’t thicken up the way I wanted it to, even after hours of cooking and two different methods. I’m willing to try again though – anyone have a favorite recipe to point me too?
My other favorite way of preserving apples is baking them into a sweet German apple cake. I bake the cake in loaf pans or cupcake molds and freeze accordingly. It’s great for fall parties where I don’t have time to bake something fresh. I take the cake out the night before and defrost it in the fridge. Perfect!
I took this photo apple picking two years ago – has it been that long already? I went to Riamede Orchards. I am also starting to think about pumpkins and fall decor… I’ve never made pumpkin butter, but maybe this year? I’ll save the rest of my fall ideas for another post. Enjoy the beautiful weekend!
