Today was my one year wedding anniversary! We celebrated with my parents at Waterfall Cafe, a very exclusive New Jersey venue. Only my family members and friends can ever get reservations! The menu presented some challenges, from making something easy to serve, well-suited to dining al fresco, and a nutritionally balanced meal.
For appetizers, I made stuffed mushrooms and strawberry goat cheese slices. To add some protein, I made a stuffing with mushroom stems, two cooked veggie burgers, a slice of whole wheat bread, and added seasonings. For the strawberries, I made little balls of French goat cheese, rolled them in chopped chives, and then placed them on the strawberry slices. I drizzled olive oil and balsamic vinaigrette over the whole plate, and sprinkled salt over everything as well.
The main dish was spinach ravioli with homemade pesto, sauteed sweet potatoes and onions, grilled summer squash, zucchini, and green peppers, and a green salad.
For dessert, chocolate cupcakes of course! The recipe I chose was from the Scharffen Berger cookbook and I made a chocolate buttercream frosting. I served these with a few spoonfuls of blueberries on the side, and just a splash of heavy cream over the fruit. A wonderful, indulgent meal for a very special occasion!
