Well, as promised, here are some of the fabulous dishes my catering manager whipped up on my vacation a week ago. Featured is the Panini! Muenster cheese with red peppers and spinach. Side dish of cherries, and Diet Cherry Coke. I learned on this trip that I love panini, and once I move somewhere with a regular sized kitchen and pantry, I will immediately get myself a Krupps Panini Press.
Some of my favorites didn’t photograph well. These included coconut crusted tofu with peach salsa and fresh corn with chili-lime butter, black bean soup, and red lentil soup. I also had some fabulous vegetarian sushi in NYC, and amazing fish and chips at the Long Valley Pub and Brewery. We called ahead for a reservation, and had a nice table by the window in a semi-secluded spot with a tablecloth.
Squash and zucchini from a friend’s garden. It was amazing! I brought some back and I’m hoping to make my own version of the Chocolate Zucchini cupcakes this week. I’m thinking of making the batter, and instead of doing a cake or cupcakes, baking it in two 9×5 loaf pans.
